From the Fujian Province of Eastern China, this is a mixture of both green and white tea leaves hand crafted in to round balls and tied with thread. When the ball is steeped it gently unfurls to reveal a red Amaranth flower at its centre. The liquor is light and bright with a delicate jasmine aroma and flavour. A simply stunning creation that offers a wonderful end to a meal.
The perfect cup:
Use one bud per cup. Use freshly drawn boiled water that has been allowed to cool to 80 ºC
(approximately 3 minutes) and watch the leaves unfurl to display the red Amaranth flower.
